Some pairings need no introduction.
Say them together and you can almost smell them: cantucci and Vin Santo.

It is one of those combinations that tastes of Tuscany even before the first bite. Of tables laid with care, of meals that have no intention of ending, of amber-coloured little glasses and crisp biscuits picked up with your fingers. A small, joyful ritual, only apparently simple.

And where else could we begin, if not with Tuscan IGP Cantucci?

One biscuit, a thousand stories

The cantuccio is one of the most recognisable biscuits in our tradition. The Consortium for the Protection of Cantuccini Toscani IGP defines it as a typical Tuscan almond biscuit, known and loved all over the world, traditionally enjoyed dipped in sweet fortified wines such as Vin Santo.

Its history goes back a long way. The origins of cantucci are believed to date back at least to the 16th century, and the name seems to derive either from “canto”, meaning part of a whole, or from the Latin “cantellus”, meaning a piece or slice of bread. In the third edition of the Vocabolario dell’Accademia della Crusca, published in 1691, the word “cantuccio” already appears, defined as a sliced biscuit.

Small, yes.
But with a very big story.

Tuscan IGP Cantucci: what does it really mean?

When we say Tuscan PGI Cantucci, we are not just talking about a name.
We are talking about a product linked to a territory, a recipe and a set of production rules.

The European Protected Geographical Indication recognition arrived in 2016 and protects the Tuscan origin, raw materials and production methods. The information sheet created as part of the projects promoting Tuscany’s quality products reminds us that Cantuccini Toscani, or Tuscan PGI Cantucci, are now among the best-known Italian biscuits in the world.

Their distinctive features include their oblique shape, obtained by slicing the baked loaf diagonally, their golden surface and the generous presence of whole almonds. The Consortium states that the minimum percentage of whole shelled almonds must be 20%.

And then there is that special texture: crumbly, but not too hard. Firm, yet ready to melt in the mouth.

Vin Santo: the little glass of hospitality

Vin Santo is much more than a dessert wine.
It is a gesture.

A symbol of hospitality: traditionally, each family would offer it to guests according to its own recipe, jealously guarding the secret.

Vin Santo del Chianti is a DOC passito wine produced in several Tuscan provinces, including Florence, Pistoia, Prato, Siena, Arezzo and Pisa. The DOC designation was established in 1997 as recognition for a wine that has always been closely linked to the Chianti area.

Part of its charm also comes from time. The grapes are traditionally selected with care, left to dry, and then the must is transferred into caratelli, small wooden barrels where the wine slowly matures. The Chianti Wine Consortium explains that Vin Santo del Chianti must age for at least three years in caratelli, and four years for the Riserva version.

Now you see why that little glass should be sipped slowly?

Cantucci and Vin Santo: why do they go so well together?

The secret of this pairing is all about balance.

On one side, the cantuccio: dry, fragrant, crisp, with the almond remaining the true star.
On the other, Vin Santo: sweet or drier depending on the version, amber-coloured, enveloping, with notes that recall honey, dried fruit, raisins, wood and time.

When the cantuccio meets Vin Santo, a little magic happens: the biscuit softens just enough, without losing its character; the wine slips into its texture and enhances the aroma of the almond. It is a taste that takes its time.

And let’s be honest: in Tuscany, dipping a cantuccio into Vin Santo is almost an identity gesture.
You do not need to explain it too much.
You do it. And then you smile.

Serve them at the end of a meal, perhaps on a small plate in the centre of the table, with little dessert glasses. Or prepare them for a special afternoon treat, whenever you feel like bringing a little Tuscany into your day.

And if someone asks: “Should you dip them or not?”
The answer is simple: do whatever makes you happiest.

The cantuccio must be good on its own.
Vin Santo must be good on its own.
But together, what a pair!

A tradition to bite into

Cantucci and Vin Santo are much more than a dessert.
They are a way to end a meal without really ending it. They are an excuse to stay seated just a little longer. They are the crisp sound of the biscuit as it breaks, the warm colour of the wine in the glass, the fragrance of almonds, the sweetness that arrives slowly.

They are Tuscany to be tasted.
They are a small story to tell with your mouth full.
